Tangerine

Troy Regier brings in Satsuma mandarins. These tangerines are easy to peel and just coming into season.

Peppers
 
Chef Sal Morino of Bottega Marino makes stuffed lipstick peppers. The peppers are first blanched in water with vinegar. The stuffing is made with canned Italian tuna packed in olive oil, chopped parsley and capers.  This mixture is stuffed into the peppers.
