What are your favorite Indian cookbooks?

There are so many really good ones. But some authors to look for are: Julie Sahni, Madhur Jaffrey, Neelam Batra, Maya Kaimal and Suvir Saran. The Indian Cookbooks in my library I use the most are: General Indian: 1000 Indian Recipes, and Classic Indian Cooking, for South Indian Dakshin: Vegetarian Cuisine from South India and Savoring the Spice Coast of India.
