    Deep End Diner Eddie Lin talks to Ernesto Uchimura of

    Plan Check about his signature condiment –

    ketchup leather. Essentially ketchup leather is a fancy farmers market driven fruit roll up that Chef Uchimura puts on his hamburgers. You can call it a gimmick, but the chef has a good point – by dehydrating the homemade ketchup he takes the water out which leaves only pure ketchup flavor that is then reconstituted by the burger juices which results in a beefy tasting ketchup.
