Bill Esparza is Good Food’s taco correspondent. Referring to himself as the first ever “tacorazzo,” he writes about all things taco for the Essential Tcolumn of Los Angeles Magazine and on his blog, Street Gourmet LA. This week, he shared his favorite go-to Sinaloan-style taco picks.

    CARNE ASADA CHORREADAS

Angelenos, a new taco cart has hit the streets, specializing in Mazatlan-style carne asada. It’s called Tacos la Carreta. Bill says the menu items to order are its carne asada chorreadas, which are essentially toasted vampirostoppedwith a layer of melted lard and cheese for extra flavor. It’s the first truly northern Sinaloan carne asada cart to hit the streets of LA, and their quality steak is something you won’t want to miss.

Tacos La Carreta: 413 North Wilmington Avenue, Compton (Sundays only from 3:30–9:30PM)

    MACHACA, CHILORIO & MENUDO

El Sinaloensedishes up plates of Sinaloan-style machaca (beef jerky cooked with onions, peppers and scrambled eggs) and spicy pork chilorio, along with fresh tortillas for D.I.Y. tacos. You’ll also want to try their white menudo and asadoplate.

El Sinaloense: 7601 State Street, Huntington Park, CA 90255 (323-581-1532)

    MARLIN & SHRIMP TACOS

If seafood tacos are what you’re craving, head to Coni’Seafood for the smoked tacos de marlin(as in the fish) or their tacos gobernador, named after a former Sinaloan governor who had a special fondness for tacos filled with shrimp and melted cheese.

    Coni’Seafood: 3544 West Imperial Highway, Inglewood, CA 90303 (310-672-2339)
