Elizabeth Minchilli’s Mulberry Pie

This recipe comes to us from Elizabeth Minchilli, a friend of Evan’s. Elizabeth is a multi-talented Writer, Blogger, App Developer, Foodie, as well as a regular guest on TV and Radio shows.  She has contributed to over forty magazines and written six books about Italian life. She maintains her blog, Elizabeith Minchilli in Rome, documenting her daily living in Rome and Umbria and recently featured a recipe for Mulberry Pie.

I’m definitely one of those people who is slightly afraid of pies. But a few things happened in the last week that made me think pies were in order. First of all both our Mulberry and Cherry trees were groaning with fruit. They were calling out “make a pie out of me, please.” When I thought I could no longer ignore them the second pie sign came to me. Way in the back of my cupboard I found two pristine pie pans that Evan had brought to our house years ago, when she came to visit. If I remember correctly she made an amazing peach pie.

And then the pie pans sat there, ignored. Until last weekend when I made my very first mulberry pie. A success! This was immediately followed by a cherry pie. Now that I’ve managed to subdue my pie fear, I will carry on through the pie season, Not sure I’m up to a pie a day, but I’ll give it my best.
