This week on Good Food as we continue our summer cocktail coverage, author Lesley Jacobs Solmonson is joined by Tim Loden, bartender of Comme Ca, who teaches us how to make the classic Gin Cocktail.

Gin Cocktail

Adapted from Jerry Thomas’s 1862 reprint of How to Mix Drinks, or the Bon Vivant’s Companion.

3 or 4 dashes of gum syrup*

2 dashes of bitters**

2 ounces (60 ml) genever or genever-style gin

1 or 2 dashes curacao

1 small piece of lemon peel

Per Thomas’s exact recipe, fill a cocktail shaker one-third full of fine ice, shake well and strain into a (cocktail) glass. (*For gum syrup, subsititue simple syrup. To make: Heat 1 part superfine (icing) sugar in 1 part water until combined. Store in refrigerator. **Bitters may be Angostura, Fee Brothers or Peychaud’s per one’s taste.)
