Noted mixologist Julian Cox is making housemade flavored sodas at Sotto where he directs the beverage program. He says if you have a Soda Stream at home and fresh fruit you can experiment making flavor seltzers at home. For his Billy Ray Soda, he uses housemade celery soda to give it an effervescence feel. Billy Ray Soda

2 oz. Dr. Browns Cel-Ray

3/4 oz. Fresh Lemon Juice

3/4 oz. Velvet Falernum

1 oz. Bourbon

1/2 oz. Vodka

Shake all ingredients.

Add 2 oz. Bitters

Strain
