Laura Avery chats with Matthew Biancaniello this week on the Market Report. He’s the head bartender at The Library Bar at the Hollywood Roosevelt hotel. He shops at many area farmers markets (nearly every day) to get fresh produce for his cocktails. He tells Laura that he doesn’t have a cocktail menu and he doesn’t serve vodka/red bull. Instead, patrons are served a drink based on their tastes and what’s in season. Cocktails are about $15. His recipe for Winter in Jamaica using Garcia Farms fresh citrus is after the jump…

Winter in Jamaica

Muddle a 1/4 each of meyer lemon, satsuma, bearss lime, persian lime, blood orange with a 1/2 ounce of Agave syrup and 1/2 oz of Saint Elizabeth Allspice Dram. The add 2 oz of Smith and Cross rum. Shake and strain over ice and garnish with a dehydrated blood orange slice.
