Tomorrow on Good Food, Laura Avery talks to Ari Kolender, Chef de Cuisine at Red Medicine, about what he’s doing with green strawberries from Jaime Farms. Red Medicine’s Master Pickling Liquid

1kg rice wine vinegar

600g water

600g sugar

200g fish sauce

65g lime juice

-Dissolve the sugar into water over heat

-Let the syrup cool then add to the remaining ingredients

*If you add the syrup while it is hot, it will affect the flavor of the other ingredients.

*We like Three Crabs Brand fish sauce(sold at HK market and California market)
