This week on Good Food, Loteria Grill chef and owner Jimmy Shaw, prepares for Cinco de Mayo and discusses the tequila accompaniment – sangrita.

Sangrita Clasica

Yield 14 fl oz

Ingredients

6 fl oz fresh orange juice

2 fl oz fresh lime juice

2 fl oz Tamarind puree

3 fl oz Tomato Juice

2 tsp. Tapatio Sauce

1 dash Maggi Seasoning

1 dash Worcestershire Sauce

1 pinch Kosher Salt

1 pinch powder chile

Homemade Tamarind Puree

1 lb Tamarind

1 Qt. Water

3 oz granulated sugar

Mix all ingredients well and serve with your favorite Tequila. Keep refrigerated.

To prepare Tamarind Puree:

Peel tamarindos and clean very well. In a heavy skillet bring to a boil the tamarindo water and sugar.

Lower the flame and let simmer for about 30 minutes or until tamarind is soft.

Press the tamarind pulp through a strainer to obtain a puree.

Enjoy!
