    Nicolette Hahn Niman's latest book is Defending Beef : The Case for Sustainable Meat Production. The former environmental lawyer and vegetarian became a grass-fed cattle rancher after she discovered that carefully managed herds could have a positive effect on the environment. She operates BN Ranch with her husband, Bill Niman.
