My name is Morgan Simons. I’m a chef and baker, and have owned a catering company since I was 21 years old. I have always loved pie, and as far back as I can remember I wanted to open a pie shop. I recently launched a baking business called Pi bake shop, which mainly focuses on pies, both sweet and savory. We are currently only available as a delivery service, but hope to be in many local farmers markets very soon!

Banana Nutella Creme Pie

1 9inch crust (Baked)

(my crust recipe doesn’t really have measurements, I do it all by feel)

3 Bananas

1/3 cup Nutella

When The Crust comes out of the oven cover the bottom and sides with nutella.

Custard

3 cups whole milk

8 large egg yolks

2/3 cup sugar

1/3 cup cornstarch

1/4 teaspoon salt

1 tablespoon unsalted butter

1 vanilla bean

Combine all ingredients (except milk and vanilla) in a bowl, and whisk.

Heat milk with vanilla.

Add 1 cup of hot milk to egg yolk mixture and whisk.

Add egg mixture back to the hot milk and bring the mixture just up to a bubble.

Remove from heat.

When Cool, alternate the custard with layers of sliced bananas.

Chill and top with fresh whipped cream.
