On this week’s show, Evan gets a history lesson on the Parker House Roll and Chef Tim Goodell describes how he likes to make the famed crustless dinner rolls. His unique touch is the addition of cheese on top of the rolls. He serves them family style at his restaurant Public Kitchen & Bar at the Roosevelt Hotel in Hollywood. Parker House Rolls

Ingredients:

5oz…… Fresh yeast

2 cups warm water

3 cups warm milk

1 3/4 cups sugar

8 eggs

1 1/2 lbs. Soft butter

18 cups all purpose flour

3 tbs. Salt.

Warm milk and water – add yeast and sugar and dissolve.

Place in mixer; add eggs and butter and mix for 1 minute.

Add flour and salt and mix for 14 minutes

Ret dough rise in a warm area until it doubles in size.

Punch dough

Scale out 1.5 ounce pieces and roll into balls.

Place balls into a buttered baking dish, as many fit next to each other.

Let dough rise, doubling is size

Egg-wash the dough, sprinkle with Fleur de Sel

Bake in 350 degree oven for 12 minutes

Top with cheese and bake for an additional 6 minutes.
