    ‘The King’ of Baldoria

    At Baldoria in Little Tokyo, David King works Marrakech limonettes into a Darjeeling tea-infused vodka cocktail inspired by Arnold “The King” Palmer.

    With the 2017 Masters Tournament not far away, David King, owner and beverage director at Baldoria, is teeing up for the big day with a new cocktail on the menu inspired by none other than Arnold “The King” Palmer. King uses Darjeeling tea-infused vodka and Marrakech limonettes from Mud Creek Ranch in Santa Paula, California.

    The King

    Yield: Makes about 8 servings

    Ingredients

    2 oz Darjeeling-infused Loft & Bear vodka

    1 oz Demerara simple syrup (1:1 ratio)

    1 oz freshly squeezed Marrakech limonette juice

    Marrakech limonette wedge, for garnish

    Equipment

    A Mason jar, with lid

    A few whiskey barrel chips (optional)

    A Collins glass

    Instructions

    Infuse the vodka: Using a Mason jar, infuse 90 grams of loose Darjeeling tea leaves in half a liter (2 cups) of vodka with a few wood chips, if using. Seal tightly with lid and store at room temperature for 12 days.

    Prepare the simple syrup: In a small saucepan, dissolve 1 ounce of Demerara sugar in 1 ounce of water. Set aside.

    For The King: Once fully infused, combine 2 ounces of the Darjeeling tea-infused vodka with 1 ounce of freshly squeezed Marrakech limonette juice and 1 ounce of the simple syrup in a shaker filled with ice. Shake for 30 seconds and pour the mixture into a Collins glass filled with ice. Garnish with a limonette wedge.
