Cocktail Recipe: The John Collins

Try this take on an old-school cocktail. This version of the John Collins, a cocktail that’s been around since the 1860’s, replaces gin with genever.

This recipe comes from David Solmonson and Lesley Jacobs Solmonson, authors of 12 Bottle Barand the website with the same name. The couple will be on Good Food this weekend to talk about their goalof making classic cocktails more accessible to novice bartenders at home.

The John Collins

2 oz Genever

1 oz Lemon Juice

1 tsp Powdered Sugar (+/- to taste)

3 oz Club Soda (+/- to taste)

Stir genever, lemon juice, and sugar together in a Collins glass until sugar is dissolved.

Add 2-3 ice cubes and top with Club Soda.

Garnish with a lemon slice.
