In this outtake, Evan talks to Magnus Nilsson, chef/owner at Faviken in Sweden, about using older dairy cows as beef. Most steers are fed grain and slaughtered between 22 and 30 months but Nilsson prefers to utilize the meat from older dairy cows that have been fed on grass for their whole life. Some of his beef comes from cows that lived to be 7 to 10 years old.
