California grown blueberries have definitely come into their own. That means that one can easily afford enough berries for the luxurious depth of a deep dish pie. I should say that I’m not an advocate for using the deep dish pie plate indiscriminately. For example, deep dish apple pie? No thanks. I like a pie piled high with fruit but above the rim usually, not below. Amazing the minutia one starts to think about isn’t it? The beauty of using blueberries in a deep dish is that you get a thick layer of jammy berry goodness with just the right amount of crust.
I added a healthy amount of lime juice to give the berries some additional tartness.
