A listener was wondering what my response as a restaurant person is to hearing about pine nut mouth. So here it is. We will no longer have pine nuts on the menu. If we happen to find Italian or Spanish pine nuts they will make a cameo appearance and get special billing. So what does that mean for pesto? Well for years Angeli chef Kathy Ternay has made a special Sicilian pesto with almonds. It’s quite delicious and I, for one won’t miss the overly resinated flavor of inferior, stubby pine nuts.
