Josie Le Balch of Josie Restaurant in Santa Monica talks to Laura Avery this week on the Market Report. She shares a recipe for a spinach salad with raw asparagus and orange (recipe here). She also shared a recipe for spinach with Cara Cara oranges and Bloomsdale spinach:
Cara Cara Orange and Bloomsdale Spinach Salad
3 large Cara Cara oranges (or your favorite citrus) sectioned
1 lb Bloomsdale spinach
4 each Spring onions, cut in quarters and roasted
1/4 cup grated ricotta salata cheese
Place spinach, onions and orange sections in a large salad bowl and toss to coat with the dressing. Garnish with grated ricotta cheese sprinkled over the top.
1 Tablespoon lemon juice
1 Tablespoon red wine vinegar
1 tsp local honey
1 tsp minced shallots
1 tsp salt
1 tsp black pepper
4 Tablespoons extra-virgin olive oil
Mix together and adjust seasoning.
