On July 1st California will be the first state in the nation to ban the sale, serving and production of foie gras. Jon Shook and Vinny Dotolo of Animal and Son of a Gun Restaurants say the ingredient is irreplaceable in the kitchen and Lesley Barger Suter of Los Angeles Magazine questions who will be responsible for enforcing the ban.
