    Recently the New Yorker profiled Niki Nakayama, calling her Palms restaurant n/naka the most prominent kaiseki restaurant in America. Along with her wife and partner Carole Iida, Niki has carved out her own path in perhaps the most rigorous of all Japanese food traditions, and one that has historically excluded women.
