    The Shifting Notion of Fine Dining

    Ryan Sutton is one of two restaurant critics at Eater New York. His review of Per Se in December of 2014 described a restaurant out of touch with the modern age of fine dining. He discusses the challenge of negatively reviewing an icon and describes how the notion of fine dining has shifted to casual environments and even longer tasting menus.
