    Antonio Medina is the chef and owner of the Gastrobus food truck, and this week he talks to us about llapingacho, which are potato griddle cakes served with peanut sauce and a fried egg. They are also often times served at farmers' markets in Ecuador. You can find his recipe for llapingacho on the Good Food blog .
