She also likes to cut the green mangoes into matchsticks for a cole-slaw-like salad with fish sauce, chile sauce, mint, lime juice and either chicken or shrimp.

Michael and Bob Markov are brothers behind Markov Farms. They are successfully growing Valencia Pride mangoes near San Diego, a feat that no one believed possible as most mangoes require scorching dessert conditions. Their mangoes are currently green but can be enjoyed in salads, as a component of sweet and sour soup or even pickled.
