Recently the New Yorker profiled Niki Nakayama, calling her Palms restaurant n/naka the most prominent kaiseki restaurant in America. Along with her wife and partner Carole Iida , Niki has carved out her own path in perhaps the most rigorous of all Japanese food traditions, and one that has historically excluded women.
